The fruit is all picked. The crush is over. What happens now?
We asked our winemaker extraordinaire Charlie Tsegeletos. Here’s what he had to say:
The grapes have all been picked, and most of the juice has undergone fermentation. We’re still watching a few wines that are slowly fermenting - mostly zinfandels. The reds are all undergoing a Malo-lactic fermentation, which softens them a bit.
Once we get the wines to the appropriate levels of sugar, we’ll remove the solids from the new wine. This is the time we taste every wine of each variety and start thinking about blends. For me this is really the fun part - it's like opening up your Christmas presents
All in all, it looks like we've got some excellent wine again this year.”
