Tomato Avocado Salad

Serves 4 as a side salad, 2 as a meal by itself


1 lb Roma tomatoes
1 English cucumber, sliced
1/2 medium red onion, sliced
2 avocados, diced
2 Tbsp extra virgin olive oil
Juice of 2 medium limes (about 2 Tbsp)
1/4 cup (1/2 bunch) cilantro, washed, dried and chopped
1 tsp sea salt
1/8 tsp black pepper


1. Chop tomatoes, slice cucumbers, dice avocados, slice onions and chop cilantro

2. Place prepared vegetables in a large salad bowl

3. In a small bowl mix olive oil, lime juice–use a whisk to blend

4. Pour olive oil mixture over vegetables and toss lightly

5. Sprinkle with salt and pepper and toss lightly again

Perfect with hearty country bread. Try substituting Cayenne pepper for black pepper if you want a little more kick!
