3 1/2 oz rainbow carrots (cut lengthwise with tops removed)
1/4 tsp crushed red chili flakes
5 sprigs thyme
1 Tbsp honey
1 Tbsp olive oil
lemon zest from half of lemon
4 slices multigrain bread
4 oz goat cheese
1 Tbsp milk
salt and pepper to taste
Directions:
Heat oven to 400ºF.
Scatter the carrots, chili flakes, and thyme onto a baking tray. Add the honey, olive oil, salt and pepper over top. Toss carrots until covered and roast in oven for 15 minutes.
Meanwhile, in a standing or hand mixer, whip the goat cheese, lemon zest, milk, salt and pepper until light and fluffy.
Spread the whipped goat cheese mixture on each slice of bread and top with roasted carrots. Place in the oven until bread becomes toasted (about 5 minutes). Enjoy!
