Complex and true to taste for a cool climate grown Merlot.
The grapes for our Merlot come from our Five Sisters Estate Vineyard located adjacent to the winery and on Catapult Ranch located east of Petaluma, both in the Sonoma Coast AVA. This is a cool growing region which often has fog cover until late morning and sunny, breezy afternoons. It yields grapes with great intensity and bright acidity.
Grapes were handpicked and whisked to the winery where they were destemmed without crushing. This gentle handling helps to ensure smooth tannins and mouthfeel. Grapes were then pumped to a stainless-steel tank where fermentation was initiated and completed with naturally occurring yeast. Fermentation temperature was controlled at a maximum of 85 degrees for the perfect balance of extraction and fruit retention. Following malolactic fermentation, the wine was transferred into a combination of new and neutral oak where it was aged for 10 months.
