Cashmere Black is a big, full-bodied, complex red wine, with tons of flavor while remaining well-balanced. Blackberry and mocha aromas are followed by bold flavors of dark berries, and coffee, which lead to a smooth mouth-filling finish.
The grapes that make up this Petite Sirah and Alicante Bouchet blend come from the warm and historic grape growing region of Oakley, California in Contra Costa County. Deep sandy soils, warm days and cool nights are ideal for ripening Petite Sirah and Alicante Bouschet. When these two block-buster varieties are put together they make a dark, complex and rich red wine.
The grapes were hand-picked and delivered to our crush pad in Sonoma where they were destemmed and pumped to a temperature-controlled fermenting tank. Native yeast was used to ferment all the different lots used in the production of this wine. Once the fermentation had extracted the perfect amount of tannins from the skins, the grapes were pressed. Both free run and press juice are combined to enhance the wine's structure. The wine was racked to barrels with 30% new French oak with a medium toast which enhanced the fruit. The wine underwent a complete Malo-lactic fermentation.
