Our 2020 Seven Ranchlands Cabernet explodes with blueberry, blackberry pie, elderberry, plum jam, slight cigar box, and mocha oak notes. With a long finish and fine-grained tannins and invigorating freshness, this wine is perfect to drink now or to age for the next 5-7 years.
The main supply of fruit for our Seven Ranchlands Cabernet Sauvignon comes from studious family growers from Mendocino County. Based around Hopland and Ukiah, these vineyards are on west-facing slopes to get the best sunshine but also bear the brunt of the nearby costal influences translating to lower yields, long hang-time and perfect ripeness at the end of the season.
Grapes are hand-harvested at night and bought to the winery at dawn. We 100% destem them and must pump them to tanks to help extract the most flavor out of the grapes. They are allowed to naturally begin fermentation and we pump them over two to three times a day for two weeks before pressing. It completes malolactic fermentation in the tank before being racked to barrels where it sees 50% new American oak for 12 months before racking, blending, and bottling.
