Bloody Mary Grilled Cheese

Pairs With: Cline Family Cellars Fog Swept Pinot Noir

Serves: 4


  • 8 slices of bacon
  • 8 slices of sourdough bread
  • 5 Tbsp mayonnaise
  • 8 oz brie cheese
  • handful of arugula
  • salt and pepper to taste
  • 7 Tbsp butter (room temperature)
  • 2 Tbsp tomato paste
  • 1 Tbsp worcestershire sauce
  • 7 drops tabasco sauce


  1. Cook bacon using your preferred method until crispy.
  2. Make Bloody Mary Butter - Mix butter, tomato paste, worcestershire, tabasco, salt and pepper together. Set aside.
  3. Cut brie into 12 slices.
  4. Spread mayonnaise on the outside of each piece of bread.
  5. Place a skillet over medium heat. Once heated, place 4 slices of bread (mayonnaise side down) on the skillet. Spread an even layer of Bloody Mary butter, evenly arrange cheese over the top, add bacon and arugula, and cover with another slice of bread (mayonnaise side up).
  6. Flip sandwich in the skillet when the bottom side is golden brown to your liking. Cook until the other side is golden brown. Slice in half and enjoy!
