Cranberry & Brie Holiday Bites

Pairs With: Cline Family Cellars Ancient Vines Carignane

 

Ingredients:

  • All-purpose flour (for dusting the dough and cutting board)
  • 1 (4 oz) wheel of brie cheese
  • Rosemary (for garnish)

Crescent roll dough

  • ½ egg
  • 4 ½ cups flour
  • ½ Tbsp salt
  • ½ scant cup sugar
  • 1 Tbsp yeast
  • ¾ cup milk
  • 1 cup water

Cranberry sauce

  • ¾ cup sugar
  • ½ cup orange juice
  • ½ cup water
  • 12 oz fresh cranberries, rinsed
  • Pinch of salt
  • 1 cinnamon stick
  • 1 piece of orange peel

Directions:

  1. Preheat oven to 350 degrees.
  2. Make crescent roll dough: Measure into a mixing bowl, flour, salt sugar. In a separate bowl. Mix water (warm) with yeast. Let yeast sit for a couple of minutes to activate. In another bowl, mix the egg and milk. Add yeast to wet mixture than combine wet and dry mixtures together. Kneed for 15 minutes, roll out dough, and cut into 8 even pieces.
  3. Spray cupcake pan with cooking spray so dough does not stick.
  4. Press dough pieces into cupcake pan.
  5. Cut brie into 1 inch cubes and place one cube onto each dough piece.
  6. Place in 350 degree oven for 15 to 20 minutes until golden brown.
  7. While cooking bites, make cranberry sauce: Measure all ingredients into small saucepan and cook on medium to low heat for 20 minutes until thickened.
  8. Once bites are out of oven, spoon 1 Tbsp of cranberry sauce on top and garnish with a sprig of rosemary. Serve warm.
