Pairs With: Cline Family Cellars Seven Ranchlands Nancy's Cuvee

Serves 4-6

INGREDIENTS:

  • 2tbls butter
  • 8 dates – pitted
  • 1tbls flakey sea salt
  • 1 loaf French bread
  • 16oz ricotta
  • Mediterranean Spice blend (the Olive Press)

INSTRUCTIONS:

  1. Slice and toast bread.
  2. Add a dollop of ricotta onto bread and sprinkle with Mediterranean spice blend.
  3. Heat 1/4-inch olive oil in a small sauté pan over medium heat.
  4. Fill the pan with dates and cook, turning them a few times, just until they've warmed through. (They burn easily, so don't overdo it.)
  5. Serve dates on top of crostini and ricotta and top with flaky sea salt.
