The Girl & The Fig — White Bean Chicken Chili

Serves: 6 people
Ingredients
**Ingredient Set 1:**
- 3 cups grilled and chopped chicken breast
- 1 Tbsp olive oil
- 1 Tbsp butter
- 1 white onion, diced
- 4 cloves garlic, minced
- 1 can Great Northern beans (rinsed)
- 1 can butter beans (rinsed)
- 1 can white corn
- 2 cans diced green chilis
- 30 oz chicken broth
**Ingredient Set 2:**
- Cumin, to taste
- Salt, to taste
- White pepper, to taste
- Half & half (amount depends on desired creaminess)
- 1 lime
- Monterey Jack cheese
**Instructions**
1. Grill the chicken breast and chop it into bite-sized pieces.
2. In a stock pot, sauté the onion and garlic in butter and olive oil until softened.
3. Add the chopped grilled chicken along with all ingredients from Ingredient Set 1 to the pot and heat through.
4. Once heated, add Ingredient Set 2 and stir well.
5. To serve, add lime to taste and sprinkle with Monterey Jack cheese.
