Our Riesling offers delicious flavors of lime and pineapple with perfectly balanced acidity leads to a crisp and refreshing finish.
Most of the grapes for this wine are from a cordon trained, spur-pruned vineyard planted in the well-drained and cool Potter Valley of Mendocino County. The balance of the grapes are from our Estate "Five Sisters" vineyard, planted on an east-facing hillside adjacent to the winery. The soil is well-drained and the region is known for its cool temperatures and fog-laden mornings.
Grapes were handpicked and destemmed without being crushed, then pumped directly into our tank press where the juice was gently squeezed from the berries. The juice was chilled to 45 degrees F and settled before it was pumped to a small, temperature controlled stainless steel tank. We used a special yeast, developed at the University of Stellenbosch, to bring out the wonderful citrus, floral and peach character of the wine. Once the ideal sugar and alcohol balance was achieved, we chilled the tank down to naturally arrest fermentation, resulting in a bright, fresh wine.
